Chitosan is a product of deacetylation of chitin. It is abundant in nature and is widely found in the shells of shrimps, crabs and insects, and in the cell walls of algae and fungi. It is the second largest producer of cellulose. The second largest natural polymer.
The properties of chitosan with different molecular weights vary widely and sometimes even exhibit opposite characteristics. Many of the special functions of chitosan are only manifested when the molecular weight is reduced to a certain extent.
Water-soluble chitosan having a relative molecular weight of less than 10,000 has a unique physiological activity. For example, it has the functions of lowering cholesterol in liver and serum, lowering blood pressure, blood sugar and blood lipids, inhibiting tumor cell growth, promoting proliferation of bifidobacteria, inhibiting Escherichia coli, and preventing gastric ulcer.

Other knowledge of Chitosan
Chitosan is a liner polysaccharide produced by extraction from shells of crab. It is off powder with a low bulk density. However, in order to make chitosan better for application in food supplements, we improve the bulk density to be around 0.6g/ml.
Chitosan is insoluble in water or alkali solution. But it is soluble in inorganic acid like diluted hydrochloric acid, nitric acid, and most organic acid.
The purity of chitosan is calculated on the deacetylation degree. The deacetylation degree is from 70% to 95% depending on the different application of chitosan.
